Origin of Black Pepper

Despite having about 115,000 hectares of pepper-growing land, Vietnam is the world’s leading producing country with an output of about 190,000 tons in 2023.

At 2023, the three Central Highlands provinces of Dak Nong (about 33,600 hectares), Dak Lak (about 28,631 hectares) and Gia Lai (over 13,500 hectares) will still be the main raw material areas, accounting for 63.5% of the area. The Southeast region accounts for about 29.1% of the pepper area, concentrated mainly in 3 provinces of Binh Phuoc, Dong Nai and Ba Ria – Vung Tau. Some other provinces have large pepper areas such as Quang Tri (2,100ha), Lam Dong (2,000ha)…

Black pepper production

The workers in the pepper factory usually proceed the following steps to produce black pepper – the most trade type of pepper in the market:

  • Step 1 – Harvesting: Black pepper is harvested manually when about 5-10% of the berries on a spike begin to turn red, indicating ripeness. Each country may have its own specific standards for determining the optimal harvest time.
  • Step 2 – Fermenting: After harvesting, the berries undergo fermentation, which triggers enzyme reactions that darken the outer peel. Fermentation times vary by country, ranging from a few hours in Sri Lanka to several days in Indonesia, influenced by the desired characteristics of the final product.
  • Step 3 – Washing: The harvested berries are cleaned using specialized tools or by hand. A winnowing basket is used to separate larger from smaller pieces, which may then be dried.
  • Step 4 – Peeling: This step enhances the enzymatic processes necessary for achieving the desired black color. Soaking the berries in hot water for about 10 minutes helps darken their exterior. A simple method involves placing the berries in a bag tied to a stick for easy immersion.
  • Step 5 – Drying: Drying is critical in black pepper production, with sun drying being the most common method among small-scale farmers. The moisture content should ideally be between 12.5% and 13.5%. Artificial dryers may also be used, operating at or below 80°C to preserve nutritional value.
  • Step 6 – Grading: The use of winnowing baskets helps remove dirt and dust while grading the black pepper.
  • Step 7 – Pounding: Pounding increases the market value of black pepper when it is traded.
  • Step 8 – Packaging and Storage: To maintain quality, black pepper must be carefully packaged and stored to preserve moisture and flavor. Options like polypropylene containers or simple electric heat sealing are effective for protecting bulk orders.
