Overview of star anise

Producing and exporting countries

Vietnam and China are the two largest producers and exporters of star anise in the world today. However, compared to Chinese star anise, Vietnamese star anise is of much better quality, with a sweet taste and natural aroma.

Star anise in Vietnam is grown mainly in the northern provinces such as Quang Ninh, and Cao Bang province…, however among them, the most famous is Lang Son province which accounts for nearly 75% of the country’s star anise growing area.

Appearance and taste

Star anise is the dried fruit of the star anise (Illicium verum), usually 0.25 to 0.5 cm in diameter. Its fruits are characterized by 6-8 swings, and each swing is usually 1 cm long with a single seed. Star anise is glossy, and smooth with light brown color, but when dry it will turn reddish brown or rusty.

Types of star anise

Star anise is often classified into 2 types:

  • Whole star anise: Spring star anise and Autumn Star anise
  • Broken star anise
